Although, for simple recording like that, I prefer to use JACK and jack_capture. That would add the complexity for you of configuring JACK, so arecord seems like the win.

In the old days (2001-2005), I vaguely remember using sox for recording, but my memory has been fading fast, so I don't recall the details.
